Bacon-Wrapped Stuffed Pork Tenderloin

Bacon-Wrapped Stuffed Pork Tenderloin

Juicy pork, a molten cheesy center, and a crisp bacon shell — this Bacon-Wrapped Stuffed Pork Tenderloin is the showstopper that eats like a holiday roast but cooks on a weeknight timeline. Stuffed with cream cheese, mozzarella, roasted peppers, and spinach, then wrapped in bacon and roasted until golden.

Ingredients

  • 1 pork tenderloin (about 1 1/4 lbs), butterflied
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella, divided
  • 1/2 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt, divided
  • 1/2 tsp black pepper, divided
  • 8-10 slices bacon
  • 1 tbsp olive oil
  • 1 tbsp brown sugar (optional, for extra caramelization)
  • Fresh rosemary, for garnish

Instructions

  1. Heat the oven: Preheat to 400°F (200°C). Line a sheet pan with foil and set a wire rack on top.
  2. Butterfly the pork: Slice the tenderloin lengthwise almost through, open like a book, and pound to an even 1/2-inch thickness. Season with half the salt and pepper.
  3. Make the filling: Mix cream cheese, 3/4 cup mozzarella, roasted peppers, spinach, garlic, Italian seasoning, and remaining salt and pepper.
  4. Stuff and roll: Spread the filling over the pork, leaving a 1-inch border. Roll up tightly from the long side and tie with kitchen twine in 4-5 spots.
  5. Wrap in bacon: Lay bacon slices slightly overlapping on a board, set the roll on top, and wrap it up. Sprinkle with brown sugar if using.
  6. Sear (optional but recommended): Heat olive oil in an oven-safe skillet and sear the roll 2 minutes per side until the bacon starts to crisp.
  7. Roast: Transfer to the rack and roast 25-30 minutes until the internal temperature reaches 145°F.
  8. Rest and slice: Rest 10 minutes, remove twine, sprinkle with remaining mozzarella while hot, and slice into medallions.

Pro tip: Don’t skip the rest — slicing too early lets all the molten cheese escape instead of staying in that beautiful swirl.
