Sweet caramelized onions, juicy seasoned beef, and melted cheese in every slice — this French Onion Beef Meatloaf brings all the cozy flavors of French onion soup to the dinner table. This is the comfort-food classic from @osamashealthyrecipes that had everyone commenting MEATLOAF for the recipe. Tender ground beef is blended with savory seasonings, layered with rich onion flavor, and finished with golden, bubbling cheese.
Why you’ll love them
- All the French-onion-soup flavor — sweet caramelized onions plus nutty melted gruyère — in sliceable meatloaf form.
- High-protein comfort food: roughly 28g of protein per thick slice.
- One pan, minimal fuss: caramelize, mix, bake, and let the oven do the work.
- Leftovers make an elite next-day sandwich with the crispy cheese edges.
Ingredients
- 2 lb (900 g) ground beef (80/20)
- 2 large yellow onions, thinly sliced
- 1 tbsp butter
- 1 large egg
- ½ cup breadcrumbs
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp fresh thyme leaves (or ½ tsp dried)
- 1½ cups shredded gruyère or Swiss cheese
Instructions
- Caramelize. Melt the butter in a large skillet over medium heat. Add the onions with a pinch of salt and cook 20–25 minutes, stirring often, until deep golden and sweet. Let cool slightly.
- Mix. In a large bowl, gently combine the ground beef, egg, breadcrumbs, Worcestershire, garlic powder, salt, pepper, thyme, and the caramelized onions — just until everything holds together.
- Shape. Press into a loaf shape on a parchment-lined sheet pan or into a loaf pan.
- Bake. Bake at 375°F (190°C) for 45 minutes. Top with the shredded gruyère and bake 10–15 minutes more, until the cheese is golden and bubbling and the loaf reads 160°F (71°C) inside.
- Rest & slice. Rest 10 minutes before slicing thick so the juices settle.
Tips
- Don’t rush the onions — the deep golden color is where all the sweetness comes from.
- Grate the cheese fresh; pre-shredded melts fine but fresh gruyère bubbles better.
- A sheet pan gives more caramelized crust; a loaf pan gives a taller, juicier slice — pick your style.
- Add a splash of beef broth to the pan if you want an instant onion gravy.
