Why you’ll love them
- All the lasagna flavor in bite-size, finger-food form — perfect for parties and game day.
- Baked in a muffin tin, so every cupcake gets those crispy, cheesy edges.
- Serious protein: roughly 22g per serving of 2 from beef and cheese.
- Make-ahead friendly — assemble in the morning, bake when guests arrive.
Ingredients
Meat sauce:
- 1 lb (450 g) ground beef (85/15)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 tsp Italian seasoning
- ½ tsp salt, ¼ tsp black pepper
Cups:
- 12 large wonton wrappers or 6 lasagna noodles, cooked and cut into squares
- ¾ cup ricotta cheese
- 1 egg, beaten
- 1½ cups shredded mozzarella
- ½ cup grated Parmesan
- Chopped fresh basil, for topping
Instructions
- Mix — brown the beef: Cook the ground beef and onion in a skillet over medium-high heat 6–7 minutes until the beef is browned and the onion soft. Add the garlic, Italian seasoning, salt, and pepper; cook 1 minute more. Stir in the marinara, simmer 5 minutes, and set aside.
- Ricotta: Stir the ricotta with the beaten egg and a pinch of salt in a small bowl until smooth.
- Line the tin: Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin. Press one wonton wrapper (or pasta square) into each cup, letting the edges ruffle up.
- Fill: Spoon 1 tablespoon of meat sauce into each cup, add 1 teaspoon of the ricotta mixture, then sprinkle with mozzarella.
- Layer once more: Repeat with another thin layer of sauce and mozzarella, then dust the tops with Parmesan.
- Bake: Bake 15–18 minutes until the edges are crispy and golden and the cheese is bubbling. Rest 5 minutes — they firm up as they cool — then lift out with a small spatula.
- Serve: Scatter fresh basil over the top and serve warm.
Tips
- Don’t overfill the cups — a heaping tablespoon of sauce per layer is plenty; overfilled cups spill and steam instead of crisping.
- Let them rest the full 5 minutes before removing so the layers set and hold their shape.
- Reheat leftovers in a 375°F oven for 8 minutes to bring back the crispy edges — the microwave makes them soft.
