These Spicy Garlic & Herb Marinated Eggplant Slivers blew up in our latest reel on @homecookingbymadison — tender eggplant slivers soaked in bold garlic, fragrant herbs, and a spicy, savory marinade. Every bite bursts with Mediterranean-inspired flavor.
Thin slices of eggplant soak up a delicious blend of olive oil, garlic, herbs, and a gentle chili kick, creating a rich, tangy, melt-in-your-mouth bite that’s impossible to resist. Serve them with crusty bread, alongside grilled dishes, or as part of your favorite appetizer spread.
Why you’ll love them
- Big Mediterranean flavor from simple pantry ingredients
- Make-ahead friendly — the flavor gets even better overnight
- Perfect with crusty bread, grilled meats, or on an appetizer spread
Ingredients
- 2 medium eggplants, cut into thin slivers
- 1/2 cup olive oil
- 4 cloves garlic, thinly sliced
- 1 tsp red chili flakes (or 1 fresh red chili, sliced)
- 2 tbsp fresh parsley, chopped (or a mix of oregano and basil)
- 1 tbsp red wine vinegar or fresh lemon juice
- 1 tsp salt, plus more to taste
Instructions
- Salt the eggplant. Toss the eggplant slivers with the salt, let rest 20–30 minutes, then rinse and pat completely dry.
- Sear until tender. Grill or pan-sear the slivers in a little olive oil until golden and soft, working in batches.
- Mix the marinade. Whisk the remaining olive oil with the garlic, chili, herbs, vinegar, and a pinch of salt.
- Marinate. Layer the warm eggplant in a jar or shallow dish, pour over the marinade, and refrigerate at least 2 hours — overnight is best.
- Serve. Bring to room temperature and serve with crusty bread, alongside grilled dishes, or on an appetizer spread.
Tips
- Salting first draws out bitterness and keeps the slivers silky, not soggy.
- Slice the eggplant evenly so every sliver cooks at the same rate.
- Keeps up to 5 days refrigerated — the flavor deepens each day.
