Smoked Paprika Chicken

Smoked Paprika Chicken

Smoky, sweet, and just a little charred at the edges — this smoked paprika chicken is proof that a handful of spices can transform ordinary chicken into something unforgettable. The paprika rub caramelizes in the oven’s heat, giving every bite deep color, juicy meat, and a gentle smoky warmth.

Ingredients

  • 8 bone-in, skin-on chicken thighs (or drumsticks)
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne (optional, for heat)
  • 3 tablespoons olive oil
  • 1 lemon, half juiced and half cut into wedges
  • Fresh parsley, chopped, to serve

Instructions

  1. Heat the oven: Preheat to 425°F (220°C). Line a rimmed baking sheet with foil and set a wire rack on top if you have one.
  2. Mix the rub: In a small bowl, combine the smoked paprika, garlic powder, onion powder, oregano, salt, pepper, and cayenne if using.
  3. Coat the chicken: Pat the chicken very dry with paper towels. Drizzle with olive oil and the lemon juice, then rub the spice mixture all over, working it under the skin where you can.
  4. Roast: Arrange the chicken skin-side up on the rack and roast 35–40 minutes, until the skin is crisp and charred at the edges and the internal temperature reaches 175°F (80°C) in the thickest part.
  5. Rest and serve: Rest 5–10 minutes so the juices settle. Scatter with parsley and serve with lemon wedges and your favorite sides.

Pro tip: Patting the chicken completely dry before rubbing is what gets you shatteringly crisp, deeply browned skin — moisture is the enemy of char.
