Slow Cooker Chicken Thighs

Fall-off-the-bone tender, golden, and dripping with savory juices — these Slow Cooker Chicken Thighs are proof that the simplest dinners are often the best. Bone-in thighs are rubbed with smoky paprika and cracked black pepper, then slow-cooked until the meat is meltingly tender and the skin turns beautifully golden. Set it, forget it, and come home to a comfort-food dinner.

Ingredients

  • 4 bone-in, skin-on chicken thighs (about 2 lbs)
  • 2 tbsp olive oil
  • 1 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1/2 tsp dried thyme
  • 4 cloves garlic, smashed
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice
  • Fresh thyme or parsley, for serving

Instructions

  1. Season the chicken: Pat the chicken thighs very dry with paper towels — this is the key to golden skin. Rub all over with olive oil, then season generously with the paprika, garlic powder, onion powder, salt, black pepper, and thyme.
  2. Load the slow cooker: Scatter the smashed garlic cloves in the bottom of the slow cooker and pour in the chicken broth and lemon juice. Arrange the thighs skin-side up in a single layer.
  3. Slow cook: Cover and cook on LOW for 5–6 hours or on HIGH for 2 1/2–3 hours, until the chicken is tender and reaches 175°F (79°C) internally.
  4. Crisp the skin (optional but recommended): For extra-golden skin, transfer the thighs to a foil-lined baking sheet, brush with a little of the cooking juices, and broil 3–5 minutes until the skin crisps and bronzes.
  5. Serve: Spoon the warm cooking juices over the thighs, scatter with fresh thyme or parsley, and serve immediately with mashed potatoes, rice, or crusty bread to soak up the juices.

Pro tip: Patting the skin completely dry and broiling at the end is what delivers that “crispy skin” finish — skip the broiler and you will still get incredibly tender meat, just with softer skin. Leftovers shred beautifully for tacos, sandwiches, or chicken salad.
