Flaky, golden, and oozing with cheese — this Cheesy Ground Beef Puff Pastry Roll takes humble ground beef to a whole new level. Seasoned beef and a generous layer of melted cheese are rolled up in buttery puff pastry and baked until shatteringly crisp. Slice it thick and watch it disappear at family dinners, game nights, and potlucks.
Ingredients
- 1 lb ground beef (80/20)
- 1 sheet puff pastry, thawed
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 tbsp ketchup or tomato paste
- 1 egg, beaten (for egg wash)
- 1 tbsp sesame seeds (optional)
- 2 tbsp fresh parsley, chopped
Instructions
- Prep the oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Brown the beef: Heat olive oil in a skillet over medium-high heat. Add the onion and cook 3 minutes, then add the ground beef, breaking it apart. Cook 6–7 minutes until browned.
- Season well: Stir in the garlic, smoked paprika, onion powder, oregano, salt, pepper, and ketchup. Cook 1 minute more, then let cool slightly.
- Roll it up: Unfold the puff pastry on a floured surface. Spread the beef mixture down the center, leaving a 1-inch border. Top with mozzarella and cheddar.
- Seal the roll: Fold the pastry over the filling, pinch the seams and ends to seal, and place seam-side down on the baking sheet.
- Egg wash: Brush the roll all over with beaten egg and sprinkle with sesame seeds if using. Cut 3 small slits on top for steam.
- Bake golden: Bake 22–28 minutes until deeply golden, puffed, and crisp.
- Rest and slice: Rest 5–10 minutes so the cheese sets, then slice into thick rounds. Garnish with parsley and serve.
Pro tip: Let the beef filling cool for at least 10 minutes before rolling — a hot filling melts the pastry layers and ruins the flake.
