Why you’ll love them
- Every slice reveals a creamy garlic-herb center — it looks restaurant-fancy with weeknight effort.
- About 42g of protein per serving — serious high-protein comfort food.
- Sear-then-roast in one oven-safe skillet keeps it simple and juicy.
- Elegant enough for guests, easy enough for a Tuesday.
Ingredients
- 1.5 lb (680 g) chicken tenderloins
- 4 oz (115 g) cream cheese, softened
- ½ cup shredded mozzarella
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh rosemary or thyme, chopped
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp paprika
- 2 tbsp olive oil
- Toothpicks or kitchen twine
Instructions
- Filling. Stir together the cream cheese, mozzarella, garlic, parsley, rosemary, ½ tsp of the salt, and ¼ tsp of the pepper.
- Butterfly. Slice each tenderloin lengthwise almost through and open it flat; pound gently to an even thickness. Season with the remaining salt, pepper, and the paprika.
- Stuff. Spoon about 1 tbsp of filling onto each piece, roll it up, and secure with toothpicks or tie with kitchen twine.
- Sear. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the rolls 2 minutes per side until golden.
- Roast. Transfer to a 400°F (200°C) oven for 12–15 minutes, until the internal temperature reads 165°F (74°C). Rest 5 minutes, remove the toothpicks, and slice.
Tips
- Make sure the cream cheese is fully softened so the filling spreads without tearing the chicken.
- Don’t toss the pan juices — swirl in a splash of chicken broth for a quick sauce.
- Slice on a slight diagonal to show off the stuffed center.
