Ingredients

  • 500 g ground beef
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili flakes, plus extra to taste
  • 2 cups cooked fluffy rice (jasmine or short-grain)
  • 1 cup shredded carrots
  • 1 cucumber, thinly sliced or ribboned
  • 1 cup kimchi
  • 4 green onions, sliced
  • 1 tablespoon toasted sesame seeds
  • 4 eggs, fried (optional, for serving)
  • Salt and black pepper, to taste

Instructions

  1. Brown the beef: Heat the sesame oil in a large skillet over medium-high heat. Add the ground beef, breaking it up with a wooden spoon, and cook for 5–6 minutes until well browned. Drain off any excess fat.
  2. Build the aromatics: Push the beef to one side of the skillet, add the garlic and ginger, and cook for 1 minute until fragrant, then stir everything together.
  3. Make the sauce: Stir in the soy sauce, gochujang, brown sugar, rice vinegar, and chili flakes. Simmer for 2–3 minutes until the beef is coated in a glossy, sweet-savory sauce. Season with salt and pepper to taste.
  4. Prep the toppings: While the beef simmers, shred the carrots, slice the cucumber, and slice the green onions. If using fried eggs, fry them until the whites are set and the yolks are still runny.
  5. Assemble the bowls: Divide the fluffy rice among four bowls. Spoon the Korean ground beef over the rice, then arrange the carrots, cucumber, and kimchi around the bowl.
  6. Finish and serve: Top with sliced green onions, a sprinkle of sesame seeds, and a fried egg if using. Serve immediately while hot.

Pro tip: For the deepest flavor, let the beef get properly browned before adding the sauce — those caramelized edges are what make the bowl taste restaurant-good. Double the sauce if you like your bowls extra saucy, and keep the toppings crisp and cold for the perfect hot-and-crunchy contrast.
