Pan-Seared Steak

As seen in our latest Instagram reel

A gorgeous golden crust, tender juicy steak, and rich garlic butter melting over every bite — this Pan-Seared Steak is pure steakhouse magic made at home. This is the date-night showstopper from @dishesbygrace_ that had everyone commenting STEAK for the recipe. Steak is seared in a hot skillet until beautifully browned, then basted with melted butter, fragrant garlic, and aromatic herbs for incredible flavor.

Why you’ll love them

  • Restaurant results with a skillet, butter, and 20 minutes — no grill required.
  • The garlic-herb butter baste builds a rich, savory finish you can’t get from seasoning alone.
  • About 42g of protein per serving from lean, tender steak.
  • One pan means the fond becomes an instant pan sauce.

Ingredients

  • 2 beef tenderloin steaks (6 oz / 170 g each), room temperature
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp neutral oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, smashed
  • 3 sprigs fresh thyme or rosemary

Instructions

  1. Season. Pat the steaks very dry and season all over with the salt and pepper. Rest at room temperature 20 minutes.
  2. Sear. Heat the oil in a heavy skillet over high heat until smoking. Sear the steaks 2–3 minutes per side for a deep golden crust.
  3. Baste. Lower the heat to medium, add the butter, garlic, and herbs, and baste the steaks with the foaming butter 1–2 minutes.
  4. Temp. Pull at 130–135°F (54–57°C) for medium-rare, or to your liking.
  5. Rest. Rest 5–10 minutes, slice against the grain, and spoon the garlic butter over the top.

Tips

  • Room-temperature steaks cook more evenly than fridge-cold ones.
  • Cast iron holds the heat you need for a real crust — don’t crowd the pan.
  • Tilt the pan toward you and baste constantly for maximum buttery flavor.
  • Save the leftover herb butter for eggs, vegetables, or crusty bread.
