Mini Garlic Parmesan Chicken Meatloaves

As seen in our latest Instagram reel

Juicy little chicken meatloaves packed with garlic, savory Parmesan, and irresistible cheesy flavor — these Mini Garlic Parmesan Chicken Meatloaves make comfort food extra delicious. This is the weeknight hero from @dishesbygrace_ that had everyone commenting MEATLOAF for the recipe. Tender ground chicken is blended with fragrant garlic, Parmesan cheese, and flavorful seasonings, then baked into golden mini loaves that are moist inside and bursting with savory goodness.

Why you’ll love them

  • Individual mini loaves cook faster than one big meatloaf — dinner in about 30 minutes.
  • Big protein payoff: roughly 29g per mini meatloaf.
  • Garlic + Parmesan + a mozzarella cap means every bite is savory and cheesy.
  • Great for meal prep: they portion, store, and reheat perfectly.

Ingredients

  • 2 lb (900 g) ground chicken
  • ½ cup grated Parmesan cheese
  • ⅓ cup breadcrumbs
  • 1 large egg
  • 4 cloves garlic, minced
  • 2 tbsp chopped fresh parsley, plus more for serving
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • ½ cup shredded mozzarella

Instructions

  1. Prep. Heat the oven to 400°F (200°C). Line a sheet pan with parchment and brush with 1 tbsp of the olive oil.
  2. Mix. In a large bowl, gently combine the ground chicken, Parmesan, breadcrumbs, egg, garlic, parsley, Italian seasoning, salt, and pepper — just until mixed. Don’t overwork it.
  3. Shape. Form into 8 small oval loaves and place on the pan. Brush the tops with the remaining olive oil.
  4. Bake. Bake 20 minutes, top each with mozzarella, and bake 5–8 minutes more until the cheese is golden and the loaves read 165°F (74°C) inside.
  5. Serve. Rest 5 minutes, shower with parsley, and serve warm.

Tips

  • Wet hands make shaping the mini loaves much easier — the mixture is sticky.
  • Don’t overmix; a light hand keeps the texture tender instead of dense.
  • A thermometer is the only reliable way to know they’re done — 165°F and out.
  • Swap the mozzarella for provolone if you want a sharper cheese pull.
