Bacon-Wrapped Beef Roast

Bacon-Wrapped Beef Roast

Smoky, juicy, and impossibly impressive — this Bacon-Wrapped Beef Roast slow-roasts until fork-tender while its bacon lattice turns shatteringly crisp and bastes the beef in savory drippings. It is the kind of centerpiece that silences the table: minimal effort, maximum drama, and slices that stay pink and succulent inside.

Ingredients

  • 1 beef roast (3–3.5 lb chuck or top round), room temperature
  • 12–14 slices thick-cut bacon
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 4 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • Fresh rosemary sprigs, for roasting

Instructions

  1. Season the beef: Preheat oven to 325°F (165°C). Pat the roast dry, rub with olive oil, then coat all over with salt, pepper, garlic powder, smoked paprika, thyme, minced garlic, and Dijon mustard.
  2. Wrap in bacon: Lay the bacon slices side by side on a sheet of parchment, slightly overlapping, to form a lattice large enough to cover the roast. Place the roast in the center and roll the bacon snugly around it, tucking the ends underneath.
  3. Slow-roast: Set the wrapped roast seam-side down in a roasting pan, scatter rosemary sprigs around it, and roast 2–2.5 hours until the internal temperature reaches 135°F (57°C) for medium-rare.
  4. Crisp the bacon: Raise the oven to 450°F (230°C) and roast 10–15 minutes more until the bacon is deeply browned and crisp.
  5. Rest: Transfer to a board, tent loosely with foil, and rest 20 minutes so the juices redistribute.
  6. Slice and serve: Carve against the grain into thick slices, spoon over the pan drippings, and serve with roasted potatoes or a simple green salad.

Pro tip: Use a leave-in meat thermometer and pull the roast 5°F below your target — carryover heat finishes the job while it rests, keeping every slice juicy.
