Why you’ll love them

  • All the flavors of your favorite burrito in one easy casserole dish
  • ~29g of protein per serving, so it eats like a real meal
  • Perfect for meal prep — it reheats beautifully all week
  • Feeds a crowd from one pan with mostly pantry ingredients

Ingredients

  • 1 lb (450g) lean ground beef (90% lean)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 packet (1 oz / 28g) taco seasoning
  • 1 can (15 oz / 425g) red enchilada sauce, divided
  • 8 small flour tortillas (8-inch)
  • 2 cups shredded Mexican-blend cheese, divided
  • 1/2 cup black beans, rinsed (optional)
  • Fresh cilantro, sour cream, and sliced jalapeños, to serve

Instructions

  1. Brown the beef: Heat the oil in a large skillet over medium-high heat. Add the beef and onion and cook 6–8 minutes, breaking the meat apart, until browned and the onion is soft. Stir in the garlic and cook 30 seconds more.
  2. Season it: Sprinkle over the taco seasoning and pour in half the enchilada sauce. Simmer 2–3 minutes until thickened and glossy. Remove from heat.
  3. Build the layers: Spread 1/4 cup of the remaining enchilada sauce in a 9×13-inch baking dish. Layer 4 tortillas (tear to fit), half the beef mixture, and 1 cup of cheese. Repeat with the remaining tortillas, beef, and cheese, then spoon the rest of the sauce over the top.
  4. Bake until bubbly: Bake at 375°F (190°C) for 20–25 minutes, until the cheese is fully melted and the edges are golden and bubbling.
  5. Rest and serve: Let the bake rest 5 minutes so the layers set, then slice and top with cilantro, a dollop of sour cream, and jalapeños if you like heat.

Tips

  • Warm the tortillas briefly before layering so they bend without cracking.
  • Swap ground beef for ground turkey or chicken with no other changes.
  • Assemble the whole dish a day ahead and bake straight from the fridge (add 5 minutes).
