Why you’ll love them
- Sweet-and-tangy maple Dijon glaze caramelizes into a gorgeous coating.
- Tender, juicy pork tenderloin with ~36g protein per serving.
- Weeknight-simple with only a handful of pantry ingredients.
- Elegant enough for guests, easy enough for a Tuesday.
Ingredients
- 1 pork tenderloin (1–1.25 lb), trimmed
- 3 tbsp pure maple syrup
- 2 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 1 tbsp fresh parsley, chopped, to finish
Instructions
- Preheat and season. Heat the oven to 425°F (220°C). Pat the tenderloin completely dry and season all over with salt and pepper.
- Sear. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the tenderloin 2–3 minutes per side until golden brown all over.
- Whisk the glaze. In a small bowl, whisk together the maple syrup, Dijon mustard, and minced garlic.
- Glaze and roast. Brush the tenderloin generously with the glaze. Transfer the skillet to the oven and roast 15–18 minutes, brushing with more glaze halfway through, until the internal temperature reaches 145°F.
- Rest. Transfer to a cutting board, tent loosely with foil, and rest 5–10 minutes so the juices redistribute.
- Slice and serve. Slice into medallions, spoon over the pan juices, and finish with chopped parsley.
Tips
- Use a meat thermometer — pull the pork at 145°F for juicy, never-dry results.
- Real maple syrup caramelizes far better than pancake syrup — it’s worth it here.
- Don’t skip the sear; it builds the flavor base the glaze clings to.
- Leftovers make excellent next-day sandwiches or grain-bowl protein.
