Why you’ll love them
- Tangy, crunchy, garlicky, and fiery — serious flavor in every bite.
- Better than store-bought, with just minutes of hands-on work.
- The ultimate topper for burgers, tacos, sandwiches, and nachos.
- Keeps for a month in the fridge — if they last that long.
Ingredients
- 8–10 fresh jalapeños, sliced into 1/4-inch rings
- 4 garlic cloves, thinly sliced
- 1 cup white vinegar
- 1 cup water
- 1 tablespoon kosher salt
- 1 tablespoon granulated sugar
- 1 teaspoon red pepper flakes
- 1 teaspoon whole black peppercorns
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon celery seeds
Instructions
- Pack the jalapeño rings and sliced garlic tightly into a clean 1-pint jar.
- In a small saucepan, combine the vinegar, water, salt, sugar, red pepper flakes, peppercorns, mustard seeds, and celery seeds. Bring to a boil, stirring until the salt and sugar dissolve.
- Pour the hot brine over the jalapeños, making sure they are fully submerged, and tap out any air bubbles.
- Let cool to room temperature, then seal and refrigerate for at least 24 hours before eating for the best flavor.
- Store refrigerated for up to 1 month. Pile onto burgers, tacos, and sandwiches — or snack straight from the jar.
Tips
- Wear gloves when slicing jalapeños — the oils can irritate skin.
- For extra heat, leave the seeds in; for milder rings, scrape them out first.
- The longer they sit, the better they get — give them the full 24 hours if you can.
