Hot Honey Shrimp Noodle Bowl

Sweet, spicy, and seriously slurp-worthy — this Hot Honey Shrimp Noodle Bowl takes juicy shrimp, lacquers them in a sticky hot-honey glaze, and piles them over tender rice noodles with crisp vegetables and crunchy fried shallots. Every bite hits that perfect sweet-heat balance, and the whole bowl comes together in about 25 minutes. Weeknight dinner just got a whole lot more exciting.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 8 oz rice noodles (or lo mein noodles)
  • 3 tbsp honey
  • 2 tsp chili flakes or sriracha
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp vegetable oil
  • 1 cup shredded carrots
  • 1 cucumber, julienned
  • 3 scallions, sliced
  • 1/3 cup crispy fried shallots
  • 1 tbsp toasted sesame seeds
  • 1 tbsp chili oil, for drizzling
  • Salt and black pepper to taste

Instructions

  1. Cook the noodles: Boil the rice noodles according to package directions until tender. Drain, rinse under cold water, and toss with a teaspoon of oil so they don’t stick. Set aside.
  2. Make the hot honey glaze: In a small bowl, whisk together the honey, chili flakes, soy sauce, rice vinegar, garlic, and ginger.
  3. Sear the shrimp: Heat the vegetable oil in a large skillet or wok over high heat. Season the shrimp with salt and pepper, then sear for 1-2 minutes per side until pink and lightly charred at the edges.
  4. Glaze: Pour the hot honey mixture over the shrimp and toss for 1-2 minutes until the glaze thickens and coats every shrimp in a sticky, caramelized layer. Remove from heat.
  5. Assemble the bowls: Divide the noodles among bowls. Top with shredded carrots and julienned cucumber, then pile on the glazed shrimp.
  6. Finish and serve: Drizzle with chili oil, then sprinkle with sliced scallions, crispy fried shallots, and toasted sesame seeds. Serve immediately.

Pro tip: Don’t walk away while the glaze is in the pan — hot honey goes from sticky-perfect to burnt in under a minute. Toss constantly and pull the shrimp the moment the glaze turns glossy and clings.
