Crispy on the outside, soft and tender inside, and packed with protein — these High Protein Cottage Cheese Waffles turn a wholesome breakfast into something worth stacking high. Creamy cottage cheese, eggs, oats, and a touch of vanilla blend into a golden batter that cooks up fluffy and satisfying, ready for fresh berries, a dollop of Greek yogurt, and a drizzle of honey. Perfect for healthy breakfasts, weekend brunches, or meal prep that actually gets you excited to wake up.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • Butter or cooking spray, for the waffle iron
  • Fresh strawberries and blueberries, to serve
  • Greek yogurt, to serve
  • Honey, to drizzle
  • Chopped nuts or seeds, to serve (optional)

Instructions

  1. Blend the batter: Add the cottage cheese, eggs, oats, vanilla, honey, baking powder, cinnamon, and salt to a blender. Blend for 30-45 seconds until smooth and thick, scraping down the sides once. Let the batter rest for 5 minutes so the oats hydrate.
  2. Preheat the waffle iron: Heat your waffle iron to medium-high and lightly grease it with butter or cooking spray.
  3. Cook the waffles: Pour about 1/3 cup of batter per waffle into the center of the iron and close the lid. Cook for 3-4 minutes until deeply golden and crisp on the outside. Repeat with the remaining batter.
  4. Keep them crisp: Transfer finished waffles to a wire rack (not a plate) so steam escapes and the edges stay crunchy while you cook the rest.
  5. Stack and serve: Stack the waffles on a plate and top with fresh berries, a generous dollop of Greek yogurt, a drizzle of honey, and a sprinkle of chopped nuts or seeds if you like.

Pro tip: Do not open the waffle iron early — wait until the steam mostly stops before lifting the lid. That is the moment the outside turns golden and crisp while the inside stays soft and fluffy.
