Creamy Tuscan Chicken Skillet

This Creamy Tuscan Chicken Skillet is the cozy one-pan dinner everyone reaches for twice — tender golden chicken breasts simmered in a rich garlic cream sauce with sun-dried tomatoes, spinach, Parmesan, and Italian herbs. Juicy, creamy, and savory, it is perfect for weeknight dinners and family meals. Serve it over pasta, rice, or mashed potatoes, or with crusty garlic bread to soak up every drop of that delicious sauce.

Ingredients

  • 4 boneless, skinless chicken breasts (about 700 g)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • 1/2 teaspoon dried basil
  • Fresh basil leaves, for serving (optional)

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season both sides with Italian seasoning, garlic powder, paprika, salt, and pepper.
  2. Sear: Heat the olive oil in a large cast-iron skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden and cooked through (internal temperature 74°C / 165°F). Remove and set aside.
  3. Build the sauce: In the same skillet, melt the butter and sauté the garlic for 30 seconds. Add the sun-dried tomatoes and cook for 1 minute.
  4. Add cream and Parmesan: Pour in the heavy cream and chicken broth, scraping up the browned bits from the pan. Simmer for 2–3 minutes, then stir in the Parmesan until the sauce thickens.
  5. Wilt the spinach: Stir in the baby spinach and dried basil, cooking just until the spinach wilts.
  6. Return the chicken: Nestle the chicken breasts back into the sauce and spoon the sauce over them. Simmer for 2 minutes, then serve hot with fresh basil if using.

Pro tip: Don’t skip the sear — those golden browned bits in the skillet are what make the cream sauce taste rich and restaurant-worthy. Deglaze with the broth and scrape them up before adding the cream.
