Ingredients

  • 1 1/2 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 whole-wheat pita breads
  • 1 cup tzatziki
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or dill, for serving
  • Lemon wedges, for serving

Instructions

  1. Marinate the chicken: In a large bowl, whisk together the olive oil, lemon juice and zest, garlic, oregano, thyme, paprika, salt, and pepper. Add the chicken cubes and toss to coat. Cover and marinate for at least 30 minutes, or up to 4 hours in the fridge.
  2. Skewer: Thread the marinated chicken onto metal or soaked wooden skewers, leaving a little space between pieces so they grill evenly.
  3. Grill: Preheat a grill or grill pan over medium-high heat. Grill the skewers for 10–12 minutes, turning every few minutes, until beautifully charred on the edges and cooked through (165°F inside).
  4. Warm the pita: While the chicken rests for 5 minutes, warm the whole-wheat pitas on the grill for 30 seconds per side until soft and lightly toasted.
  5. Build the wraps: Slide the chicken off the skewers and pile it into the warm pitas with a generous spoonful of tzatziki, cucumber, tomato, red onion, olives, and feta.
  6. Serve: Garnish with fresh parsley or dill and serve with lemon wedges and extra tzatziki on the side.

Pro tip: Don’t skip the marinating time — even 30 minutes in the lemon, garlic, and oregano marinade makes the chicken noticeably juicier and more flavorful. For the best char, make sure your grill is properly hot before the skewers go on.
