Ingredients
- 1 lb boneless, skinless chicken breast, cut into strips or bite-size pieces
- 1/2 cup all-purpose flour
- 1/2 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg, beaten
- 2 tablespoons oil, for frying or air frying
- 3 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 cup julienned carrots
- 1/2 red bell pepper, thinly sliced
- 3 green onions, sliced
- 1/4 cup chopped peanuts
- 1/2 cup mayonnaise
- 3 tablespoons sweet chilli sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce
- Fresh herbs, for serving
Instructions
- Make the bang bang sauce: Whisk together the mayonnaise, sweet chilli sauce, sriracha, honey, rice vinegar, and soy sauce until smooth and creamy. Set aside half for drizzling.
- Coat the chicken: Season the chicken with garlic powder, paprika, salt, and pepper. Dredge each piece in flour, dip in the beaten egg, then coat in panko breadcrumbs, pressing gently so the crumbs stick.
- Cook until crispy: Heat the oil in a large skillet over medium-high heat and fry the chicken for 3–4 minutes per side until golden, crispy, and cooked through. (Or air fry at 400°F for 10–12 minutes, flipping halfway.) Drain on a wire rack.
- Build the slaw: In a large bowl, toss the green and red cabbage, carrots, bell pepper, and half the green onions with enough bang bang sauce to lightly coat.
- Toss and glaze: Slice the crispy chicken, toss it in the remaining bang bang sauce until glazed, and arrange it over the slaw.
- Serve: Sprinkle with chopped peanuts, the remaining green onions, and fresh herbs. Serve with extra bang bang sauce on the side.
Pro tip: Keep the chicken and slaw separate until serving so the coating stays shatteringly crisp. Toss the chicken in the sauce right before plating — the glaze clings beautifully without making the crumbs soggy.
