Everything you love about a bacon cheeseburger, baked into one glorious loaf — this Bacon Cheeseburger Stuffed Meatloaf wraps seasoned ground beef around a molten core of crispy bacon and cheddar. Slice it open and the cheesy center oozes out like the world’s best burger. It’s the mashup your weeknight dinners have been waiting for.
Ingredients
- 2 lbs (900g) ground beef (80/20)
- 1 cup plain breadcrumbs
- 2 large eggs, lightly beaten
- 1/4 cup ketchup, plus more for topping
- 1 tablespoon yellow mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 8 slices bacon, cooked crisp and crumbled
- 2 cups shredded sharp cheddar cheese
- 1/4 cup dill pickle chips, chopped (optional)
- 1 small onion, finely diced
Instructions
- Prep the oven: Heat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Mix the meat: In a large bowl, combine the ground beef, breadcrumbs, eggs, ketchup, mustard, garlic powder, onion powder, salt, and pepper. Mix gently with your hands just until combined.
- Flatten into a rectangle: On the parchment, press the meat mixture into an even rectangle about 1/2 inch thick.
- Add the cheeseburger filling: Sprinkle the crumbled bacon, cheddar, pickles, and diced onion evenly over the meat, leaving a 1-inch border all around.
- Roll it up: Starting from a short end, roll the meat tightly around the filling like a jelly roll, pinching the seams and ends closed. Place seam-side down.
- Bake: Brush the top with a little extra ketchup and bake 50–55 minutes, until cooked through and the internal temperature reaches 160°F (71°C).
- Rest and slice: Rest 10 minutes so the cheesy center sets slightly, then slice thick to show off the spiral. Serve with extra ketchup, mustard, or burger sauce.
Pro tip: Roll with the help of the parchment paper underneath — lift the paper to guide the roll and you’ll get a tight spiral with no cracks. Letting it rest before slicing keeps the molten cheese from running everywhere.
