This Cheese-Topped Meatloaf takes the humble comfort classic and crowns it with a bubbling layer of golden melted cheese. Underneath, the meatloaf is juicy and well-seasoned, with a savory glaze baked right in — then a generous blanket of cheese goes over the top for the last stretch of baking, turning into that irresistible molten crust you have to cut through. It’s the ultimate family dinner centerpiece. This recipe was written for the @sizzlewithbella reel, which showed no written recipe.
Ingredients
- 2 lbs ground beef (80/20)
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1/3 cup ketchup, plus 1/4 cup for topping
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 1/2 cups shredded mozzarella (or a mozzarella-cheddar blend)
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat: Heat the oven to 375°F (190°C). Line a rimmed baking sheet with foil and place a wire rack on top (or use a loaf pan lightly greased).
- Mix: In a large bowl, soak the breadcrumbs in the milk for 5 minutes. Add the beef, eggs, onion, garlic, ketchup, Worcestershire, salt, pepper, and Italian seasoning. Mix gently with your hands just until combined — overmixing makes it dense.
- Shape: Form into a loaf about 9 inches long and 5 inches wide on the prepared sheet. Brush the top with the remaining 1/4 cup ketchup.
- Bake: Bake for 45 minutes, until the internal temperature reaches 150°F (65°C).
- Cheese layer: Remove from the oven and pile the shredded mozzarella evenly over the top. Return to the oven for 10–15 minutes, until the cheese is fully melted, golden, and bubbling, and the meatloaf registers 160°F (71°C) inside.
- Rest and serve: Let it rest 10 minutes so the juices settle and slices hold together. Sprinkle with parsley, slice, and serve.
Pro tip: For an extra-crispy cheese crust, switch the broiler on for the last 2 minutes and watch it closely — the cheese goes from golden to burnt fast.
