Golden, crispy potato edges, tender buttery centers, and fragrant garlic herbs in every bite — this Garlic Herb Crispy Hasselback Potato Bake is a side dish worth getting excited about. This is the cozy favorite from @lilyscravekitchen_ that had everyone commenting HASSELBACK for the recipe. Thinly sliced potatoes roast until beautifully crisp on top while staying soft and fluffy inside, soaking up rich garlic butter and aromatic herbs along the way.
Why you’ll love them
- The hasselback cut is the whole trick: crispy fan edges plus creamy centers in every potato.
- Garlic butter and fresh herbs do all the heavy lifting — simple ingredients, big payoff.
- Looks impressive on the table but takes about 10 minutes of actual work.
- The perfect partner for roasted meats, grilled chicken, or any cozy dinner.
Ingredients
- 2.5 lb (1.1 kg) Yukon Gold potatoes, scrubbed
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 5 cloves garlic, minced
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- 1½ tsp kosher salt
- ½ tsp black pepper
- Flaky sea salt, to finish
Instructions
- Prep. Heat the oven to 425°F (220°C). Place each potato between two wooden spoons or chopsticks and slice thinly (about ⅛ inch), stopping before you cut through.
- Season. Whisk the melted butter, olive oil, garlic, thyme, rosemary, salt, and pepper. Arrange the potatoes in a baking dish and brush generously, getting butter down between the slices.
- Roast. Bake 50–60 minutes, brushing with more garlic butter halfway through, until the edges are deep golden and crisp and a knife slides through easily.
- Finish. Shower with flaky sea salt and serve hot, straight from the dish.
Tips
- The chopstick trick is foolproof — it physically stops the knife from cutting through.
- Even slices cook evenly; take your time with the knife work.
- Baste twice: once before baking, once halfway — that’s how the flavor gets inside.
- Leftovers crisp back up beautifully in the air fryer.
