Why you’ll love them

  • 38g protein per serving — a steakhouse fix that fits your goals
  • One pan, 15 minutes, restaurant-worthy results
  • Buttery garlic-herb flavor in every single bite

Ingredients

  • 1½ lb (700g) sirloin or ribeye steak, cut into 1-inch bites
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (plus thyme if you like)
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Prep the steak. Pat the steak bites dry with paper towels and season generously with salt and pepper.
  2. Sear hard. Heat olive oil in a heavy skillet over high heat until shimmering. Sear the steak bites in a single layer for 1–2 minutes per side until deeply golden with a caramelized crust. Work in batches if needed.
  3. Make the garlic butter. Lower the heat to medium, add the butter and garlic, and stir for 30 seconds until fragrant — don’t let the garlic burn.
  4. Toss and finish. Return all the steak bites to the pan, toss in the sizzling garlic butter, shower with fresh herbs, and serve immediately.

Tips

  • Dry steak = better crust. Moisture is the enemy of a good sear.
  • Don’t crowd the pan — batch-sear so the bites brown instead of steam.
  • Pull the steak a touch early; it keeps cooking in the hot butter.
