Grilled Steak with Creamy Garlic Butter Sauce

Perfectly seared, juicy medium-rare steak meets a silky, rich garlic butter sauce — this Grilled Steak with Creamy Garlic Butter Sauce is steakhouse luxury made easy at home. Roasted garlic cloves melt into a creamy sauce that drapes over every slice, turning a simple grilled steak into a dinner worth celebrating.

Ingredients

  • 2 ribeye or sirloin steaks (about 1 inch thick)
  • 1 whole head of garlic
  • 4 tablespoons butter
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt, plus more to taste
  • 1 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon Dijon mustard (optional)
  • 1/4 cup beef broth

Instructions

  1. Roast the garlic: Preheat the oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with a little olive oil, wrap in foil, and roast for 30–35 minutes until soft and golden. Squeeze the cloves from their skins and set aside.
  2. Sear the steak: Pat the steaks dry and season generously with salt, black pepper, and smoked paprika. Heat the remaining olive oil in a cast-iron skillet over high heat until smoking. Sear the steaks 3–4 minutes per side for medium-rare (or to your preferred doneness). Transfer to a warm plate and tent with foil.
  3. Rest and slice: Let the steaks rest for 5–10 minutes so the juices redistribute. Slice against the grain into thick strips.
  4. Make the creamy garlic sauce: In the same skillet over medium heat, melt the butter. Add the roasted garlic cloves and mash them into the butter. Stir in the Dijon mustard (if using) and beef broth, scraping up the browned bits. Pour in the heavy cream and simmer 2–3 minutes until slightly thickened. Season with salt and pepper to taste.
  5. Serve: Arrange the sliced steak on a wooden board or warm plates, spoon the creamy garlic butter sauce generously over the top, and garnish with roasted garlic cloves and fresh parsley. Serve immediately.

Tip: Let the steaks come to room temperature for 20–30 minutes before searing — it ensures even cooking and a perfect medium-rare center.
