Marinated Cherry Tomatoes

Proof that the simplest things are often the best — these Marinated Cherry Tomatoes are sweet, tangy, and glistening with good olive oil. Ten minutes of hands-on time, one hour in the fridge, and you’ve got a side that makes grilled meats, crusty bread, and grain bowls taste like summer.

Ingredients

  • 2 pints cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/3 cup extra-virgin olive oil
  • 3 tbsp red wine vinegar
  • 2 garlic cloves, thinly sliced
  • 1 tsp dried oregano
  • 1/2 tsp sugar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, torn
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Combine the tomatoes: Add halved cherry tomatoes and sliced red onion to a large bowl.
  2. Whisk the marinade: In a small bowl, whisk olive oil, red wine vinegar, garlic, oregano, sugar, salt, pepper, and red pepper flakes.
  3. Marinate: Pour the marinade over the tomatoes and toss gently to coat every piece.
  4. Rest: Cover and refrigerate at least 1 hour (up to 24 hours), tossing once halfway through.
  5. Finish fresh: Just before serving, fold in the torn basil and parsley.
  6. Serve: Bring to room temperature for 15 minutes, then serve as a side, over grilled chicken or fish, or piled on toasted bread.

Pro tip: Use the ripest tomatoes you can find — and don’t throw away the leftover marinade; it’s liquid gold for dressing salads or dipping bread.
