Savory Beef & Onion Glazed Meatloaf

As seen in our latest Instagram reel

This savory beef & onion glazed meatloaf blew up in our latest reel on @osamashealthyrecipes — juicy seasoned beef topped with sweet caramelized onions and a rich, glossy onion glaze. It’s the cozy, old-school comfort dinner taken up a notch: tender slices of perfectly seasoned meatloaf with a jammy, caramelized onion topping that melts into every bite.

The magic is in the onions — sliced thin and cooked low and slow until deeply golden and sweet, then spooned over the meatloaf with a glossy glaze that turns sticky and caramelized in the oven’s heat. The beef itself stays moist thanks to a classic panade and a gentle hand when mixing. Serve it with creamy mashed potatoes and watch it disappear — at around 32 grams of protein per serving, it’s comfort food that actually fuels you.

Why you’ll love them

  • Sweet caramelized onions + glossy glaze over juicy seasoned beef
  • Classic comfort flavor with a restaurant-worthy finish
  • One-pan, make-ahead friendly — even better the next day
  • Around 32g protein per serving — hearty and satisfying

Ingredients

  • 2 lbs ground beef (80/20)
  • 3/4 cup panko breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 small yellow onion, finely grated
  • 3 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup, plus more for glazing
  • 1 tablespoon Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 2 large yellow onions, thinly sliced (for the topping)
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 1/4 cup beef broth

Instructions

  1. Soak the panade: Heat the oven to 375°F (190°C). In a large bowl, stir the panko and milk together and let sit 5 minutes until the crumbs absorb the milk — this keeps the meatloaf tender.
  2. Mix the meatloaf: Add the ground beef, eggs, grated onion, garlic, Worcestershire, ketchup, Dijon, salt, pepper, and onion powder to the bowl. Mix gently with your hands just until combined — overmixing makes it dense.
  3. Shape and bake: Transfer to a parchment-lined baking sheet and shape into a loaf about 9 inches long. Bake 40 minutes.
  4. Caramelize the onions: While it bakes, melt the butter in a large skillet over medium-low heat. Add the sliced onions and brown sugar with a pinch of salt. Cook slowly, stirring occasionally, 20 to 25 minutes until deeply golden and jammy. Pour in the beef broth and simmer 2 minutes into a glossy glaze.
  5. Glaze and finish: Brush the top of the meatloaf with ketchup, spoon the caramelized onions and their glaze over the top, and bake 15 to 20 minutes more, until the center reads 160°F (71°C).
  6. Rest and slice: Rest 10 minutes before slicing — this keeps every slice juicy. Spoon extra onion glaze over each portion.

Tips

  • Low and slow is the whole game for the onions — rushing them on high heat burns the sugars instead of caramelizing.
  • A free-form loaf on a sheet pan browns better all around than one baked in a loaf pan.
  • Leftovers make the best sandwiches — thick slices, toasted bread, extra glaze.
