Slow-Cooked Beef Brisket with Caramelized Onions and Gravy

Few dishes say comfort food quite like a slow-cooked beef brisket. This recipe delivers melt-in-your-mouth slices of tender brisket topped with sweet, jammy caramelized onions and a rich, savory brown gravy that begs to be spooned over every bite. Best of all, the slow cooker does most of the work, making this an effortless yet impressive dinner for family gatherings or a cozy weekend meal.

Ingredients

  • 3–4 lbs beef brisket
  • 3 large onions, thinly sliced
  • 2 cups beef broth
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1½ teaspoons salt, plus more to taste
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch (for the gravy)

Instructions

  1. Sear the brisket: Pat the brisket dry and season generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat and sear the brisket for 3–4 minutes per side until well browned. Transfer it to the slow cooker.
  2. Slow cook: Add the beef broth, garlic, thyme, bay leaves, and Worcestershire sauce to the slow cooker around the brisket. Cover and cook on LOW for 8–10 hours (or HIGH for 5–6 hours) until the meat is fork-tender.
  3. Caramelize the onions: About 45 minutes before serving, melt a knob of butter or a drizzle of oil in a large skillet over medium-low heat. Add the sliced onions and the brown sugar, and cook slowly, stirring often, for 30–40 minutes until deep golden and sweet. Season with a pinch of salt.
  4. Make the gravy: Remove the brisket from the slow cooker and tent with foil to rest. Strain the cooking liquid into a saucepan and bring to a simmer. Whisk the cornstarch with 2 tablespoons of cold water, then whisk it into the liquid and simmer for 2–3 minutes until thickened into a rich brown gravy. Season to taste with salt and pepper.
  5. Slice and serve: Slice the brisket against the grain into thick slices. Top with the caramelized onions and spoon the warm brown gravy generously over the top. Serve with mashed potatoes or crusty bread to catch every drop.

Tip: Brisket tastes even better the next day—store leftovers in the cooking liquid to keep the meat juicy, and reheat gently.
