Slow Cooker Beef Roast with Caramelized Onions

Juicy, fall-apart beef smothered in sweet golden caramelized onions and rich onion gravy — this Slow Cooker Beef Roast with Caramelized Onions is pure comfort in a bowl. A good sear and slowly caramelized onions build deep, savory-sweet flavor while the slow cooker does the rest, delivering a tender roast that practically shreds itself.

Ingredients

  • 3–4 lbs beef chuck roast
  • 4 large yellow onions, thinly sliced
  • 2 cups beef broth
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 2 tablespoons olive oil
  • 1½ teaspoons salt, plus more to taste
  • 1 teaspoon black pepper
  • 2 tablespoons cornstarch (for the gravy)

Instructions

  1. Sear the roast: Pat the chuck roast dry and season generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat and sear the roast 3–4 minutes per side until deeply browned. Transfer to the slow cooker.
  2. Caramelize the onions: In the same skillet over medium-low heat, add the sliced onions and brown sugar. Cook slowly, stirring often, for 25–30 minutes until the onions are deep golden, sweet, and jammy. Stir in the garlic and cook 1 minute more.
  3. Build the braising liquid: Pour the beef broth and apple cider vinegar into the skillet, scraping up the browned bits. Stir in the Worcestershire sauce, then pour the liquid and the caramelized onions over the roast in the slow cooker. Tuck in the thyme sprigs and bay leaves.
  4. Slow cook low and slow: Cover and cook on LOW for 8–10 hours (or HIGH for 5–6 hours) until the beef is fork-tender.
  5. Thicken gravy and serve: Transfer the roast to a platter and tent with foil. Strain the cooking liquid and onions into a saucepan; bring to a simmer. Whisk the cornstarch with 2 tablespoons of cold water, whisk into the liquid, and simmer 2–3 minutes until thickened into a rich onion gravy. Slice or shred the roast, pile the caramelized onions on top, and spoon the gravy over everything.

Tip: Leftovers make incredible French-dip style sandwiches — pile the shredded beef and onions on crusty rolls with a cup of the gravy for dipping.
