Why you’ll love it

  • Caramelized onions melt into the richest gravy
  • Hands-off cooking — the slow cooker does the work
  • Feeds a crowd with affordable chuck roast

Ingredients

  • 3 1/2 lbs beef chuck roast
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 3 tbsp olive oil
  • 3 large yellow onions, thinly sliced
  • 5 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup dry red wine (or beef broth)
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 sprigs fresh thyme, plus 1 tsp dried
  • 2 bay leaves
  • 1 tbsp brown sugar
  • 2 tbsp cornstarch mixed with 2 tbsp cold water (optional)

Instructions

  1. Season the roast generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat and sear the roast 4–5 minutes per side until deeply browned.
  2. Transfer to a slow cooker. In the same skillet, cook the onions with the brown sugar over medium heat 12–15 minutes, stirring often, until deeply golden.
  3. Stir in the garlic and tomato paste; cook 1 minute. Pour in the wine and scrape up the browned bits.
  4. Pour the onion mixture over the roast. Add the beef broth, Worcestershire, thyme, and bay leaves.
  5. Cover and cook on LOW 8–9 hours (or HIGH 5–6 hours), until the meat shreds easily.
  6. Shred the beef in the cooker and discard the bay leaves and thyme stems.
  7. For a thicker gravy, stir in the cornstarch slurry and cook on HIGH 20 minutes.
  8. Serve over mashed potatoes with plenty of the onion gravy.

Tips

  • Don’t rush the onions — deep caramelization is where the flavor lives.
  • Chuck roast is ideal; leaner cuts dry out over long cooks.
  • The gravy is liquid gold — save leftovers for open-faced sandwiches.

Nothing beats a slow Sunday roast — follow @huritastyrecipes on Instagram for the reel.
