Why you’ll love it
- Caramelized onions melt into the richest gravy
- Hands-off cooking — the slow cooker does the work
- Feeds a crowd with affordable chuck roast
Ingredients
- 3 1/2 lbs beef chuck roast
- 2 tsp kosher salt
- 1 tsp black pepper
- 3 tbsp olive oil
- 3 large yellow onions, thinly sliced
- 5 cloves garlic, minced
- 2 tbsp tomato paste
- 1 cup dry red wine (or beef broth)
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 2 sprigs fresh thyme, plus 1 tsp dried
- 2 bay leaves
- 1 tbsp brown sugar
- 2 tbsp cornstarch mixed with 2 tbsp cold water (optional)
Instructions
- Season the roast generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat and sear the roast 4–5 minutes per side until deeply browned.
- Transfer to a slow cooker. In the same skillet, cook the onions with the brown sugar over medium heat 12–15 minutes, stirring often, until deeply golden.
- Stir in the garlic and tomato paste; cook 1 minute. Pour in the wine and scrape up the browned bits.
- Pour the onion mixture over the roast. Add the beef broth, Worcestershire, thyme, and bay leaves.
- Cover and cook on LOW 8–9 hours (or HIGH 5–6 hours), until the meat shreds easily.
- Shred the beef in the cooker and discard the bay leaves and thyme stems.
- For a thicker gravy, stir in the cornstarch slurry and cook on HIGH 20 minutes.
- Serve over mashed potatoes with plenty of the onion gravy.
Tips
- Don’t rush the onions — deep caramelization is where the flavor lives.
- Chuck roast is ideal; leaner cuts dry out over long cooks.
- The gravy is liquid gold — save leftovers for open-faced sandwiches.
