Why you’ll love them

  • Shatteringly flaky pastry with a savory, cheesy center
  • Store-bought puff pastry keeps it weeknight-easy
  • Great hot, warm, or packed for lunch the next day

Ingredients

  • 1 sheet puff pastry, thawed
  • ½ lb (225g) ground beef
  • 1 cup shredded cheddar or mozzarella
  • ½ onion, finely diced
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • 1 egg, beaten (for egg wash)
  • Salt and pepper, to taste

Instructions

  1. Cook the filling. Brown the ground beef with the onion over medium-high heat. Season with salt, pepper, garlic powder, and Worcestershire sauce. Drain any excess fat and let cool slightly.
  2. Heat the oven. Preheat to 400°F (200°C). Line a baking sheet with parchment.
  3. Cut the pastry. Unfold the puff pastry and cut into 6 equal squares.
  4. Fill and fold. Spoon beef and a handful of cheese onto each square. Fold into rectangles or triangles, press the edges, and crimp with a fork.
  5. Egg wash and bake. Brush with beaten egg, cut a small vent in each, and bake 15–18 minutes until puffed and deep golden.
  6. Serve. Cool 5 minutes so the cheese settles, then serve warm.

Tips

  • Keep the puff pastry cold until it hits the oven — warm pastry won’t puff properly.
  • Don’t overfill; a heaping spoonful of beef and cheese per pocket is the sweet spot.
  • Reheat in the air fryer at 375°F for 3–4 minutes to bring back the flake.
