Why you’ll love them

  • Crispy-bottomed, tender-topped — the perfect dumpling texture
  • Sweet-and-spicy sticky glaze you’ll want on everything
  • Faster than takeout and twice as satisfying

Ingredients

  • 20–24 frozen or fresh dumplings (pork or chicken)
  • 2 tbsp neutral oil
  • ⅓ cup water (for steaming)
  • 3 tbsp soy sauce
  • 2 tbsp chili crisp or sweet chili sauce
  • 1 tbsp honey
  • 2 cloves garlic, grated
  • 1 tsp toasted sesame oil
  • 1 tbsp sesame seeds, plus sliced green onions to finish

Instructions

  1. Crisp the bottoms. Heat the oil in a large nonstick skillet over medium-high heat. Arrange the dumplings flat-side down and fry 2–3 minutes until golden and crisp underneath.
  2. Steam through. Carefully pour in the water, cover immediately, and steam 5–6 minutes until the dumplings are cooked through and tender. Uncover and let any remaining water evaporate.
  3. Make the glaze. While the dumplings steam, whisk together the soy sauce, chili crisp, honey, garlic, and sesame oil.
  4. Glaze and toss. Pour the glaze into the pan and toss the dumplings for 1–2 minutes until sticky and lacquered.
  5. Finish. Shower with sesame seeds and green onions, and serve immediately.

Tips

  • Don’t move the dumplings while the bottoms crisp — patience gives the best crust.
  • Stand back when adding water to hot oil; it spatters.
  • Adjust the chili to your heat tolerance — the glaze is easy to dial up or down.
