Why you’ll love them
- Crispy-bottomed, tender-topped — the perfect dumpling texture
- Sweet-and-spicy sticky glaze you’ll want on everything
- Faster than takeout and twice as satisfying
Ingredients
- 20–24 frozen or fresh dumplings (pork or chicken)
- 2 tbsp neutral oil
- ⅓ cup water (for steaming)
- 3 tbsp soy sauce
- 2 tbsp chili crisp or sweet chili sauce
- 1 tbsp honey
- 2 cloves garlic, grated
- 1 tsp toasted sesame oil
- 1 tbsp sesame seeds, plus sliced green onions to finish
Instructions
- Crisp the bottoms. Heat the oil in a large nonstick skillet over medium-high heat. Arrange the dumplings flat-side down and fry 2–3 minutes until golden and crisp underneath.
- Steam through. Carefully pour in the water, cover immediately, and steam 5–6 minutes until the dumplings are cooked through and tender. Uncover and let any remaining water evaporate.
- Make the glaze. While the dumplings steam, whisk together the soy sauce, chili crisp, honey, garlic, and sesame oil.
- Glaze and toss. Pour the glaze into the pan and toss the dumplings for 1–2 minutes until sticky and lacquered.
- Finish. Shower with sesame seeds and green onions, and serve immediately.
Tips
- Don’t move the dumplings while the bottoms crisp — patience gives the best crust.
- Stand back when adding water to hot oil; it spatters.
- Adjust the chili to your heat tolerance — the glaze is easy to dial up or down.
