This is the crowd-pleasing bake from @dishesbygrace_ that had everyone commenting CASSEROLE for the recipe. The cross-section says it all: tender potatoes, juicy beef, and stretchy cheese in every forkful.
Why you’ll love them
- Layers of potato, beef, and cheese — the comfort-food trifecta in one dish.
- Mostly hands-off: layer, bake, and let the oven do the work.
- Serious protein: roughly 28g per serving from beef and cheese.
- Even better the next day — slice it and reheat for easy leftovers.
Ingredients
- 1½ lb (680 g) russet potatoes, peeled and thinly sliced (⅛ inch)
- 1 lb (450 g) ground beef (85/15)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp salt, ½ tsp black pepper, 1 tsp paprika
- 1 can (10.5 oz) cream of mushroom soup
- ¾ cup milk
- 2 cups shredded sharp cheddar, divided
- Chopped fresh parsley, for topping
Instructions
- Prep: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish. Whisk the soup, milk, salt, pepper, and paprika in a bowl until smooth.
- Brown the beef: Cook the beef and onion in a skillet over medium-high heat 6–7 minutes until browned. Add the garlic and cook 1 minute more. Drain off excess fat.
- Layer: Spread a third of the potato slices in the dish, top with half the beef, then drizzle over a third of the soup mixture and a handful of cheddar. Repeat, finishing with potatoes, the last of the soup mixture, and the remaining cheddar on top.
- Bake covered: Cover tightly with foil and bake 45 minutes.
- Bake uncovered: Remove the foil and bake 20–25 minutes more until the top is golden and a knife slides easily through the potatoes.
- Rest and serve: Rest 10–15 minutes so the layers set, then cut into squares and finish with parsley.
Tips
- Slice the potatoes evenly thin — thick slices stay crunchy while the cheese overbrowns.
- A mandoline makes this fast and even; just watch your fingers.
- Make it ahead: assemble the night before, refrigerate, and add 10 minutes to the covered bake time.
