Why you’ll love them

  • Restaurant-worthy comfort with cozy, family-dinner vibes.
  • Juicy shrimp folded into a creamy, cheesy filling.
  • Velvety garlic Alfredo smothered over every roll-up.
  • ~25g protein per roll-up — indulgent and satisfying.

Ingredients

  • 8 lasagna noodles
  • 1 lb shrimp, peeled, deveined, and chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella, divided
  • 1/2 cup grated Parmesan, divided
  • 2 cloves garlic, minced, divided
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped, plus more to finish
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Cook the noodles. Boil the lasagna noodles until just al dente. Drain, rinse with cool water, and lay flat on a lightly oiled baking sheet so they don’t stick.
  2. Cook the shrimp. Heat the olive oil in a skillet over medium-high heat. Add the shrimp, half the garlic, salt, and pepper; cook 2–3 minutes until just pink. Remove from heat and chop roughly.
  3. Make the filling. In a bowl, mix the ricotta, half the mozzarella, half the Parmesan, the chopped shrimp, the parsley, and a pinch of salt and pepper.
  4. Make the Alfredo. In a saucepan, melt the butter, add the remaining garlic, and cook 30 seconds until fragrant. Pour in the cream, simmer 2–3 minutes until slightly thickened, then whisk in the remaining Parmesan. Season with salt and pepper.
  5. Roll. Spread a thin layer of Alfredo over the bottom of a baking dish. Spread filling down each noodle, roll up snugly, and place seam-side down in the dish. Spoon the remaining Alfredo over the top and sprinkle with the remaining mozzarella.
  6. Bake. Bake at 375°F (190°C) for 20–25 minutes until golden and bubbling. Rest 5 minutes, scatter over fresh parsley, and serve.

Tips

  • Don’t overcook the shrimp in step 2 — they finish cooking in the oven.
  • Laying the noodles flat right after draining stops them tearing when you roll.
  • A squeeze of lemon over the finished dish cuts the richness beautifully.
  • Assemble a day ahead and refrigerate; add 5–10 minutes to the bake time.
