This Crispy Parmesan Crusted Stuffed Salmon blew up on @huritastyrecipes — tender salmon stuffed with a creamy spinach and feta filling, then finished with a golden, crispy Parmesan herb crust. It tastes like a restaurant plate but comes together on one baking sheet, which is exactly why it deserves a permanent spot in your dinner rotation.
Why you’ll love it
- Restaurant-style results: a crispy, golden Parmesan crust over juicy salmon with a rich, creamy spinach-feta center — date-night looks with weeknight effort.
- High protein, real flavor: roughly 39g of protein per serving with just 12g carbs, so it fits a high-protein plan without tasting like diet food.
- One pan, 30 minutes: everything bakes together on a single sheet pan — minimal prep, minimal cleanup, maximum payoff.
Ingredients
- 4 salmon fillets (about 6 oz / 170g each), skinless
- 4 oz (115g) cream cheese, softened
- 1/2 cup (60g) crumbled feta cheese
- 2 cups (60g) fresh spinach, chopped
- 2 garlic cloves, minced
- 1/2 cup (50g) grated Parmesan cheese
- 1/3 cup (35g) panko breadcrumbs
- 2 tbsp olive oil, divided
- 1 tbsp fresh parsley or chives, chopped
- 1 tsp lemon zest + lemon wedges for serving
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a sheet pan with parchment and brush lightly with 1 tablespoon of olive oil.
- Make the filling: in a bowl, mix the cream cheese, feta, chopped spinach, garlic, and a pinch of salt and pepper until well combined.
- Cut a deep pocket into the side of each salmon fillet (don’t cut all the way through) and spoon the spinach-feta filling generously inside.
- Stir the Parmesan, panko, parsley, lemon zest, smoked paprika, and remaining olive oil in a small bowl until the crumbs are evenly coated.
- Press the Parmesan crumb mixture firmly over the top of each stuffed fillet to form a thick crust.
- Bake 14–16 minutes, until the crust is golden and crispy and the salmon flakes easily (internal temp 145°F / 63°C).
- Broil 1–2 minutes at the end for extra crunch if you like — watch closely so the crust doesn’t burn.
- Rest 3 minutes, then serve with lemon wedges and your favorite roasted vegetables or salad.
Tips
- Pat the salmon dry before stuffing — a dry surface helps the crust stick and crisp up instead of steaming.
- Don’t overstuff: a generous but contained filling keeps the pocket from bursting in the oven; secure loose edges with a toothpick if needed.
- Leftovers: refrigerate up to 2 days and reheat in the oven or air fryer at 375°F to bring the crust back to life — skip the microwave.
