Garlic Herb Roast Beef

A family dinner winner — this Garlic Herb Roast Beef is juicy, hearty, and packed with comforting flavor. A simple garlic-herb rub and slow roasting do all the work.

Ingredients

  • 1 beef top round roast (3 lbs), room temperature
  • 2 tbsp olive oil
  • 6 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme leaves
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 cup beef broth

Instructions

  1. Prep: Preheat oven to 325°F (165°C). Pat the roast dry.
  2. Rub: Mix olive oil, garlic, rosemary, thyme, salt, and pepper into a paste; coat the roast all over.
  3. Roast: Place in a roasting pan with beef broth. Roast 1.5–2 hours until internal temp reaches 135°F (57°C) for medium-rare.
  4. Rest and slice: Rest 15–20 minutes, then slice thinly against the grain. Serve with pan juices.

Pro tip: Slice thin — roast beef is lean, and thin slices against the grain keep every bite tender.
