Why you’ll love them

  • Set-it-and-forget-it — the slow cooker does all the work
  • Buttery, garlicky, and impossibly tender
  • The side dish that disappears first at every dinner

Ingredients

  • 2 lb (900g) baby potatoes, halved if large
  • 4 tbsp butter, melted
  • 5 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried rosemary (or 1 tbsp fresh)
  • 1 tsp dried thyme
  • 2 tbsp fresh parsley, chopped
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Toss. Add the potatoes to the slow cooker. Pour over the melted butter and olive oil, then toss with the garlic, rosemary, thyme, salt, and pepper until every potato is coated.
  2. Slow-cook. Cover and cook on HIGH for 3–4 hours or LOW for 5–6 hours, until the potatoes are fork-tender.
  3. Crisp (optional). For golden edges, spread the cooked potatoes on a sheet pan and broil 3–5 minutes.
  4. Finish. Toss with fresh parsley and an extra pinch of flaky salt, then serve warm.

Tips

  • Keep the potatoes a similar size so they cook evenly — halve the big ones.
  • Don’t lift the lid; slow cookers lose serious heat every time you peek.
  • Leftovers crisp up beautifully in a hot skillet with a knob of butter.
