High Protein Crispy Salmon Bites

These High Protein Crispy Salmon Bites are the kind of snack that disappears fast: cubes of fresh salmon coated in a seasoned, crunchy crust and cooked until golden on the outside and buttery-tender inside. They are high in protein, rich in healthy omega-3 fats, and ready in under 30 minutes, which makes them perfect as a quick dinner, a party appetizer, or a meal-prep protein to toss over rice bowls and salads. A squeeze of lemon and your favorite dipping sauce are all they need.

Ingredients

  • 1 1/2 lbs skinless salmon fillet, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley
  • Lemon wedges and dipping sauce, for serving

Instructions

  1. Season the salmon: Pat the salmon cubes dry with paper towels, then toss in a bowl with the olive oil, garlic powder, paprika, salt, and black pepper.
  2. Coat the bites: In a shallow bowl, mix the panko breadcrumbs with the Parmesan if using. Roll each salmon cube in the breadcrumb mixture, pressing lightly so the coating sticks.
  3. Preheat the cooking method: For the air fryer, preheat to 400°F (200°C) and lightly spray the basket. For the oven, preheat to 425°F (220°C) and line a baking sheet with parchment.
  4. Cook until crispy: Arrange the salmon bites in a single layer without crowding. Air fry for 8 to 10 minutes, shaking halfway, or bake for 10 to 12 minutes, until golden and crisp and the salmon flakes easily.
  5. Serve hot: Sprinkle with fresh parsley and serve immediately with lemon wedges and your favorite dipping sauce.

Pro tip: Pat the salmon very dry before coating — moisture is the enemy of crispiness. Cook in a single uncrowded layer so the hot air can crisp every side.
