High Protein Greek Yogurt Chicken Skewers

These High Protein Greek Yogurt Chicken Skewers are everything a weeknight dinner should be: juicy, charred at the edges, and packed with protein thanks to a tangy Greek yogurt marinade that tenderizes the chicken while it soaks up garlic, lemon, and herbs. Threaded onto skewers and grilled until golden, they stay incredibly moist inside with a beautifully caramelized outside. Serve them with warm flatbread, a crisp salad, or rice, and a cool yogurt dipping sauce for a meal that feels fresh, filling, and anything but diet food.

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes
  • 1 cup plain Greek yogurt
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Wooden or metal skewers, for grilling
  • Fresh parsley and lemon wedges, for serving

Instructions

  1. Make the marinade: In a large bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, black pepper, and red pepper flakes if using.
  2. Marinate the chicken: Add the chicken cubes to the marinade and toss until fully coated. Cover and refrigerate for at least 30 minutes, or up to 8 hours for the most tender results.
  3. Thread the skewers: If using wooden skewers, soak them in water for 30 minutes first. Thread the marinated chicken onto the skewers, leaving a little space between pieces so they cook evenly.
  4. Preheat the grill: Heat a grill or grill pan over medium-high heat and lightly oil the grates.
  5. Grill the skewers: Grill for 10 to 12 minutes, turning every few minutes, until the chicken is charred at the edges and cooked through to 165°F (74°C) inside.
  6. Rest and serve: Let the skewers rest for 5 minutes, then garnish with fresh parsley and serve with lemon wedges, flatbread, or salad.

Pro tip: Do not over-marinate in the yogurt mixture beyond 8 hours — the acidity can start to break down the chicken’s texture. Thirty minutes is plenty for juicy, flavorful skewers.
